Arroz con Leche

Description

This recipe for arroz con leche is a traditional Mexican dessert made with white rice, milk, sugar, and spices. This sweet, creamy pudding features warming spices like cinnamon and allspice with hints of vanilla and lime. It is easy to make and delicious hot or cold.

Ingreadient

    • 1 cup long grain white rice
    • 1 1/2 cups water
    • 2 cinnamon sticks
    • 1 allspice berry (or 1/8 tsp ground allspice)
    • 4 cups whole milk (See Note 1)
    • 1 cup sugar
    • 2 tsp vanilla
    • 1/8 tsp kosher salt
    • 1 lime (orange or lemon are great substitutes)

Direction

  1. Rinse rice and drain. Transfer to saucepan and add water, cinnamon and allspice. Bring to a boil, turn heat to low and cook covered, for 10 minutes.
  2. Remove lid and stir in the milk, sugar, vanilla and salt. Using a vegetable peeler, remove 2 strips of zest from the lime, add to saucepan. Cover and simmer over low heat for 30 minutes.
  3. Remove lid and stir. Cook uncovered for 10-15 minutes on low heat (this will thicken upon standing so don't be too surprised if it looks soupy at this point). Cook longer uncovered if thicker consistency is desired, or add a little more milk for thinner consistency.
  4. Serve in small bowls with either a sprinkle of lime zest or cinnamon on top.
