Skinny Slow Cooker Gumbo

Description

A healthy alternative to the high-calorie gumbo that will settle your craving without the guilt. Add rice, okra, and shrimp if you like. Serve over cooked brown or white rice.

Ingreadient

    • 2 pounds skinless, boneless chicken thighs, cubed
    • 2 (14.5 ounce) cans stewed tomatoes
    • 1 pound turkey sausage, casings removed and crumbled
    • 1 (14.5 ounce) can reduced sodium chicken broth
    • 1 large onion, chopped
    • 1 green bell pepper, chopped
    • 3 cloves garlic, minced
    • 1 tablespoon Cajun seasoning
    • ¼ teaspoon cayenne pepper
    • ¼ teaspoon ground black pepper

Direction

  1. Combine chicken thighs, tomatoes, turkey sausage, chicken broth, onion, green bell pepper, garlic, Cajun seasoning, cayenne pepper, and ground black pepper in a slow cooker. Stir together to combine.
  2. Cook on Low until flavors are blended, about 6 hours.
